Ingredients:
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ¼ cup Parmesan cheese, grated
  • 1 egg yolk
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Fresh pasta dough (store-bought or homemade)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Fresh basil, for garnish

Linguine or spaghetti is in the pasta aisle, shrimp (prawns) in the seafood section, capers in the deli aisle, and lemons, parsley, and garlic in the produce section. Olive oil and optional white wine can be found in the pantry and wine sections.
Step 1: Prepare the Filling
In a skillet, sauté the garlic and spinach in olive oil until wilted. Let it cool slightly, then mix with ricotta, Parmesan, egg yolk, salt, and pepper in a bowl.
Step 2: Assemble the Ravioli
Roll out the pasta dough and cut into small squares. Place a spoonful of the spinach mixture onto half of the squares, then cover with the remaining squares. Press the edges with a fork to seal.
Step 3: Cook the Ravioli
In the same skillet, add garlic and sauté for 1 minute. Add capers, lemon zest, lemon juice, and white wine (if using). Cook for 2 minutes, allowing the sauce to reduce slightly.
Step 4: Prepare the Sauce
In a skillet, melt butter and olive oil over medium heat. Toss the cooked ravioli in the butter sauce for 1-2 minutes.
Step 5: Serve
Garnish with fresh basil and serve with extra Parmesan cheese.
