Step 1: Heat olive oil
in a pot over medium heat. Add the chicken thighs and brown on both sides, about 5 minutes per side. Remove and set aside
Step 2: In the same pot
sauté the onion and garlic for 5 minutes. Add the diced tomatoes, olives, oregano, salt, and pepper.
Step 3: Return the chicken to the pot
cover, and simmer for 30 minutes until the chicken is cooked through and tender.
Step 4: Serve hot with a garnish of fresh herbs if desired
