Ingredients:
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp flour (or chickpea flour for gluten-free)
  • Salt and pepper to taste
  • 2 tbsp olive oil
For the Tahini Sauce:
  • ¼ cup tahini
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 2–3 tbsp water
  • Salt and pepper to taste

Chickpeas and tahini can be found in the canned goods and international foods sections, while fresh parsley, onions, and other ingredients are in the produce and pantry sections. Chickpea flour is available in the health food or gluten-free aisle if needed.
Step 1: In a food processor, combine chickpeas
onion, garlic, parsley, cumin, coriander, flour, salt, and pepper. Pulse until a rough mixture forms.
Step 2: Shape the mixture
into small patties.
Step 3: Heat olive oil
in a skillet over medium heat. Fry the falafel patties for 3–4 minutes per side, until golden brown
Step 4: In a small bowl
mix tahini, lemon juice, garlic, and water until smooth. Season with salt and pepper.
Step 5: Serve the falafel with the tahini sauce.
