Ingredients:
  • 1 can chickpeas (15 oz), drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Step 1: Heat olive oil
in a large pot and sauté onion and garlic for 3-4 minutes.
Step 2: Stir in smoked paprika and thyme
and cook for 1 minute.
Step 3: Add chickpeas and broth
and bring to a boil. Lower the heat and simmer for 20 minutes.
Step 4: Use a potato masher
to lightly mash some of the chickpeas to thicken the soup.
Step 5: Season with salt and pepper
garnish with fresh parsley, and serve.
